Christmas Cookies: Jammy Hearts

Today, I have another yummy Christmas cookie recipe for you. Because what is even better than melt-in-the-mouth buttery vanilla cookies? Melt-in-the-mouth buttery vanilla cookies with jam in the middle!

Ingredients

  • 150g gluten free flour
  • 50g caster sugar
  • a pinch of salt
  • 1 sachet of vanilla sugar or one teaspoon of vanilla essence
  • 50g groundย almonds
  • 100g soft butter or margarine
  • 1 egg yolk
  • 2 tablespoons icing sugar + some extra to decorate
  • strawberry or raspberry jam

Directions

  • Briefly combine all the ingredients except the jam with an electric mixer using the dough hooks, then work to a smooth dough with your hands.
  • Wrap the dough in cling film and leave in the fridge for at least an hour.
  • Pre-heat the oven to 150ยฐC (130ยฐC for a fan oven).
  • Roll out the dough on a floured service to about 3mm thick. Youโ€™ll probably need to put flour on the rolling pin too so that nothing sticks.
  • Cut out hearts with a cookie cutter (makes about 40 hearts, which would make 20 jam filled hearts at the end) and place on a baking sheet lined with grease proof paper. The cookies will expand quite a bit, so donโ€™t put them too close together.
  • Bake for about 10-15 minutes depending on your oven (check after 10 minutes).
  • Take the cookies from the oven and leaveย to cool for at least 10 minutes, as they are so soft they will just fall apart if you touch them before that.
  • While you are waiting for them toย cool, sprinkle them with the extra icing sugar. The cookies need to be warm so the sugar sticks. The best way to sprinkle the sugar evenly is through a sieve.
  • Once cooled, turn the other half of the cookies over and spread the backsides thinly with jam.
  • Gently put an icing sugar covered cookie heart on top of each jam spread cookie heart and leave to set.
  • Enjoy with a nice cup of tea or a mug of hot cocoa!

  1. I love cookies but spend more time buying and eating than making them myself. I tried over the summer and loved them. These look really delicious

  2. Oh I love cookies and these ‘jammy hearts’ remind me of the cult classic that is jammy dodgers. If I tried making them though I would probably eat them all myself haha!
