Jumping on the Green Smoothie Bandwagon

I know I’m a bit late to the game, but this past weekend I made my first ever green smoothie! After reading plenty of recipes until my head was spinning, I decided to largely base it on ingredients I had in the house. And yes, I do have a stock pile of coconut water and a giant jar of hemp seeds at home. Don’t ask why…

Ingredients

  • 250ml coconut water
  • large handful of baby leaf spinach
  • one kiwi
  • roughly the same amount of pineapple chunks as of kiwi
  • 1 Tbsp hemp seeds
  • a grating of fresh ginger

The bag of spinach is the one thing I bought specifically for the purpose of making a green smoothie. I simply *love* spinach. When my sister and I were kids, we used to fight over who got more spinach. True story. We always have some tins of pineapple in our reserves, since they are great for everything from salads to curries to pizza toppings. But I can’t wait to try this again when fresh pineapples are in season. And a trick I have for the ginger: I always keep a peeled piece of ginger in the freezer as it makes it easier to grate in to things, and also stops it going off. But remember to peel it first, because peeling it after it’s frozen is, well, don’t try it.

Directions

There aren’t really that many directions. The main thing was to blitz the coconut water and spinach first, until I had a smooth blend. Then I added the other ingredients and blitzed everything with my hand mixer again. I really need to put a proper blender on my wish list! Serving everything with cute straws and pineapple skewers is optional.

I managed to drink most of this before The Boy got his hands on it. He’s made me promise to make him a ‘green juice’ all of his own soon. With pineapple skewers. Of course. Seems like a winner all round!
