Easy Sweetcorn Nachos with Guacamole

For this week’s summer camp cooking session we have another savoury dish that’s popular in our house. And since there’s no sharp knives or hot pans involved, until it goes in the oven at the end, it’s a great recipe for kids to get stuck in with. My 9 yr old can even make these easy sweetcorn nachos all by himself –  all I need to do is pop them in the oven for him.

Easy Sweetcorn Nachos

This recipe is suitable for: gluten free, vegetarian, nut free.

Ingredients

For the Nachos:

  • 500g of plain or lightly salted corn tortilla crisps
  • 1 large tin of sweetcorn (ca. 260g drained)
  • 1 large tub of creme fraiche (ca. 600ml)
  • 200g grated cheese of your choice (we use cheddar)

For the Guacamole:

  • 1 avocado
  • Garlic powder
  • Salt & pepper

To Serve:

  • Sour Cream
  • Tomatoes

Utensils

  • Large oven proof dish
  • Sieve
  • Teaspoon
  • Cheese grater (if not buying already grated cheese)
  • Chopping board
  • Cutting knife
  • Tablespoon
  • Fork

Easy Sweetcorn Nachos

Directions

  • Pre-heat your oven to 200 C for a regular oven, 180 C for a fan oven.
  • Spread half of the tortilla crisps in your oven proof dish so that the bottom is covered.
  • Drain the sweetcorn in the sieve, then scatter half of it over the tortilla crisps.
  • Using the teaspoon, dot half of the creme fraiche over the tortilla crisps and sweetcorn.
  • Sprinkle half of the grated cheese on top.
  • Repeat the same steps with the other half of the ingredients.
  • Bake in the oven until the cheese on top starts to go golden and a little crispy, usually takes around 15-20 minutes.

While the nachos are in the oven, make the guacamole. Cut the avocado in half and remove the stone. Scoop out the avocado flesh with a tablespoon. Mash the avocado with a sprinkling of garlic powder and some salt and pepper. Some people like to add other ingredients to their guacamole, like lemon or lime juice, chilli, or onions. But we always make this simple, child friendly guacamole so that the boys will eat it too.

We also love to serve this with sour cream and tomatoes. The kids just like the tomatoes plain, for us grown-ups I chose them up with some spring onions and toss them with a little olive oil, salt and pepper.

  • Draining the sweetcorn.
  • Layering all the nachos ingredients in to the dish.
  • Mashing the avocado.

Adults only

  • Grating the cheese (if not using already grated cheese).
  • Handling the heavy dish and the oven.
  • Cutting the avocado and removing the stone.
