Honeydew Melon Salad

Suitable for vegetarian, gluten free, nut free; can be made lactose free

If you’re looking for a quick, refreshing summer picnic or side dish to throw together, then I have just the thing for you – melon salad! No, it’s not just different melons tossed together (though that also sounds nice). And yes, melons + other salad ingredients definitely works together, trust me.

Ingredients

  • 1 honeydew melon
  • 1 large cucumber
  • 1 pack of feta cheese (use lactose free if needed)
  • a handful of mint leaves
  • some extra virgin olive oil
  • salt & pepper

Directions

Cut the melon in half, scoop out and discard the seeds. Cut each melon half into slices, then you can easily cut the rind off each slice. Cut each slice into bite sized cubes.

Cut the cucumber in half and scoop, scoop out the seeds and either discard them or eat them (or, in my case, give them to your cucumber obsessed child to eat…) Cut each cucumber half into thick slices. Note: if you dont like the cucumber skin, you can peel it off first, but I always just wash the cucumber and leave it on.

Toss the melon and cucumber pieces together in a serving bowl and crumble over the pack of feta cheese.

Chop up a handful of mint and add to the bowl.

Finally, drizzle over some olive oil, season lightly with salt and pepper, and toss everything together until well mixed.

And that’s it! Refreshing, tasty, easy!
