Summer Salad: Watermelon, Feta & Olives

We’ve been going through a spot of rather hot weather here in Berlin. Some days it’s just so hot, you don’t feel like cooking or even eating a warm meal. Time to bring out the summer salads! One of our family favourites, beloved by adults and kids alike, is our watermelon, feta cheese and black olive salad!

Ingredients

  • Half a small watermelon
  • A pack of feta cheese
  • A jar of black olives
  • Olive oil
  • Freshly cracked black pepper

Simply cut of the watermelon and feta cheese in to small, bite sized cubes, then toss together with the black olives in a big bowl. I make sure to get olives without stones, as they are less of a pain to eat and also means it’s safe for the kids! Then just drizzle with olive oil and crack some black pepper on top. Serve with some fresh crusty bread, if you like.

Variation

I used to do this salad with the addition of basil leaves scattered on top, but the kids are not so keen on the basil so these days I leave it out. But it looks something like this:
