It’s really easy to make. All you need is:
- Two slices of gluten free bread
- Two eggs
- A dash of milk
- Half a teaspoon of ground cinnamon
- A generous knob of butter
Beat the eggs in a bowl with the dash of milk and ground cinammon. Soak your slices of bread in the mixture from both sides (you don’t need to cut it up in to little triangles, I was just using up left over bread from our cucumber party sandwiches). Heat the butter in a frying pan and fry the soaked eggy bread from both sides until the egg is cooked.
Serve with maple syrup if you have any (we had run out, sniff…) and fresh blueberries for extra indulgence.
