{Sunday Sweet} Ice Cream Sundaes

I’ve never been a chocoholic, but I do have another weakness – ice cream! And today I felt like having not just any old ice cream, but a proper ice cream sundae with all the trimmings. So, we took all the ingredients for a banana split and, in a slight variation, layered up slices of banana, vanilla ice cream and whipped cream. Since I don’t like chocolate sauce on my ice cream I had my heart set on caramel sauce instead, but our local discounter supermarket didn’t have any. Oh no! Not to worry, there’s always the old trick of boiling up a tin of sweetened condensed milk. Basically, you lay your tin of condensed milk (not evaporated milk, and it has to be the sweetened kind) on its side in a saucepan full of water and leave it to simmer for 2-3 hours on a low heat. The important thing is to make sure there’s always plenty of water in your pan, otherwise the tin is likely to explode. Also, make sure your tin has completely cooled down before opening it to avoid further potential explosion incidents.

Unfortunately, I could only find a tin with a pull top lid, and I’ve always been told not to boil those (because, yes, you’ve guessed it, they’re more likely to explode), so I used the stove top method instead. For this, sit a heat proof bowl on top of a saucepan full of water. Empty your tin into the bowl. Bring the saucepan of water to boil then turn down the heat and leave to simmer for 2-3 hours, stirring the milk occasionally. I put mine on after breakfast, left it to simmer until lunch time, then took it off the heat to cool down while we went for a walk. By the time we came back and were ready for our sundae treats, the sauce was ready too.

So, after all that, I finally had my caramel sauce to drizzle on top of our banana split sundaes. Finish off with a few brittle and chocolate sprinkles on top and we’re ready to eat. The boy got a slightly healthier version, with mostly bananas, a teaspoon each of ice cream and whipped cream, and a couple of chocolate sprinkles (because he’s a clever one and can tell straight away if his looks different from Mama’s, though he didn’t notice the lack of brittle and caramel sauce on his^^).
